Tip of the Day: Wrap sticky in!

Look on both sides of the rice wrapper. Notice that one side has a more defined rectangular-like pattern than the other.

If you feel both sides of the rice wrapper with your fingers, you will know that one side feels rougher than the other; that would be the side with more noticeable rectangular-like patterns. When soaked in water and dried, this side tends to be sticker than the other side, so you would want to make sure that this side is used as the inside when you wrap. For instance, wrap with this side facing up towards you so that when you roll the wrap, this side becomes the inside of your spring roll, not the outside. Try it out; you will notice the difference in ‘stickiness’ when you stack spring rolls on top of one another.
