Tip of the Day: Long and lean eggplants are better!

Though large eggplants require peeling to avoid bitterness, young eggplants, such as Chinese eggplants, don’t need peeling. Chinese eggplants are long and lean with a soft skin. Because these eggplants are young, their skin has yet turned bitter. Another great thing about Chinese eggplants is that they’re less watery than large ones when cooked; this makes the dish, as a whole, tastes better because the eggplants don’t soak up all the juices and oil within that particular dish. For your next eggplant recipe, avoid the peeling. Use long and lean Chinese or Thai eggplants. I guarantee you’ll like it so much better!
